SHINCHA season!! Shincha means  a bud picked at first time.
*First picked up bud : Regarding Green tea, first bud has a lot of components good for health and UMAMI. the production used first bud is high quality and better taste than second, third bud.



Every early morning, Related peoples visit Tea merchant  and introduce some kinds of first buds. Tea merchant check them and choose which one should purchase.

Tea merchant checks its color, smell, shape etc...


This needs to professional skill. He checks its quality by his sophisticated five sense.

After purchase first bud, tea masters adjusts tastes by heating.
When tea leafs gets heating, It's smell and taste is getting better.

I often hear that someone feels disgusting this and return production to shop or someone drink tea after removing something like dust.... I'd like to say it out loud.... It's a big misunderstanding!! Thank you for visiting our blog. I'm so sorry I've not up-dated this blog for a long time. It has been very very hot these days in Japan. Regarding Shizuoka area, it was around 36 degree yesterday. I've been to UK and Germany last month, there were also really hot day. Today, I'd like to introduce Cold-blew Green tea. In generally, it's common to drink tea with hot water but cold-blew method can also make good taste actually.
