The comming of spring

Finally, Spring has come to our place and cherry-blossoms in full bloom!!

When this season come to Japan, Green tea merchant gets busy because it's the season of fresh tea called SHINCHA（新茶）.

These are pictures of tea plantation near by our office.
 


As you can see this, There are light green leaf at the top of plants. This leafs are the new tea.  Usually, This leafs are picked up about mid of April. However, this year's growth is delayed. So This new leaf is just young one.


The best timing of picking up is said that "一芯四葉” means "One stalk, Four leafs”.
If even one leaf lack, other leaf get hard and quality as tea would be poor.

According to this situation such as picture, it might take more time to pick them up.

We are going to report at any time about situation of growth new leaf.

I often hear that someone feels disgusting this and return production to shop or someone drink tea after removing something like dust.... I'd like to say it out loud.... It's a big misunderstanding!! Cold-blew Green tea.

Thank you for visiting our blog. I'm so sorry I've not up-dated this blog for a long time. It has been very very hot these days in Japan. Regarding Shizuoka area, it was around 36 degree yesterday. I've been to UK and Germany last month, there were also really hot day. Today, I'd like to introduce Cold-blew Green tea. In generally, it's common to drink tea with hot water but cold-blew method can also make good taste actually. There are three big components which consist of Green tea taste. 1) Theanine＝ Sweetness : This component is easy to exude in low temperature. 2) Catechin ＝ Astringency : This component is easy to exude in high temperature. 3) Caffeine  ＝ Bitterness : This component is easy to exude in high temperature.
